Thai (ish!) salmon salad

As lovely as our holiday was, I have to say it was really nice to come home to Brixton! We've had some completely wonderful weather so tidied up our little yard in anticipation of the arrial of new plants this weekend and ate outdoors as much as possible. In the summer, we basically live out there- it's so relaxing and chilled. Even if we are completely overlooked by all of our neighbours! 

We're trying to keep up with our healthier eating even now the wedding is over, so The Boy pulled together this lovely summer salad.



You will need:
2 x fillets of salmon 
100g dried noodles
salad leaves 
4-5 radishes, chopped
3-4 spring onions, chopped
For the marinade: 
1 garlic clove, crushed and finely chopped
1 tbsp dark soy sauce
1 tbsp vegetable oil 
2 big glugs of sesame seed oil 
1 tsp white wine vineagar 
Pinch of all-spice
Juice of a lime

1. Mix the marinade together and rub into the salmon fillets. Leave for about an hour.

2. Bring a pan of water to the boil and cook the noodles according to the instructions.
3. On a griddle or frying pan over a medium heat, cook the salmon. You want to cook it skin-side down for 3/4 of the time. For the last 1/4, flip it over. Cooking times will vary, so check your packet. 

4. Mix the salad leaves, spring onion and radishes. Drain the noodles and add to the salad. Cover in any leftover marinade. Top with the salmon and serve immediately!

Enjoy this summer supper with a cold glass of white wine or some mint lemonade!
